Our first recipe will be a simple one , a favorite across the US and much of Europe PIZZA!
Dough ( makes 2 12 inch pizza crusts)
280 mil Warm Water, 3 grams Fresh Yeast ,5 grams Gluten Flour, 1 teaspoon Caster Suga,r 1 teaspoon Fine Sea Salt,550 grams Pizza Flour ( Extra, for Dusting) ,3 teaspoons Extra Virgin Olive Oil, 2 tablespoons Corn Meal
1.Place water , yeast and gluten flour in the bowl of a mixer fitted with a dough hook mix until mixture is bubbly and yeast is dissolved. Add sugar ,salt and 599 grams flour , mix until the dough becomes smooth, Then add remaining flour , mix until smooth.
2.Oil the dough and drape a damp towel over the bowl. Let sit at least one hour.
3. Place dough on a pizza pan dusted with coarse ground corn meal , work your war arounf the dough using your knuckles to stretch the dough to fit the pan.
Pizza Toppings ( Per pizza )
4 Tablespoon tomato sauce, 2 cups fresh grated mozzarella cheese 3 Tablespoon grated Parmigiano Reggiano 2 Tablespoon grated sharp cheddar ( I recommend Tillamook) Peperoni , Salami, Italian sausage can be added to taste
Add tomato sauce, ensuring a even coating across the dough (Scratch tomato sauce recipe coming in a few days )
Evenly distribute the Mozzarella, Parmigiano Reggiano and cheddar
Add additional desired toppings
Pre heat oven to 400 degrees Fahrenheit place pizzas on top oven rack and cook for 15-18 minutes or until cheese is melted and crust is golden brown .... Cut and ENJOY!
